Ingredients

Millet 1/2 cup whole grain, cooks in under 20 minutes
Dried fruit 1/4 cup apricots, cranberries, or raisins
Olive oil 1 tbsp carry in a small dropper bottle
Salt a pinch
Cinnamon 1/4 tsp optional

Method

  1. Boil 400 ml water and add the millet with a pinch of salt.
  2. Simmer for 16–18 minutes, stirring occasionally, until the grain is tender and the water is absorbed.
  3. Chop the dried fruit into small pieces. In the last minute of cooking, stir them in.
  4. Pour into your bowl, drizzle the oil over the top, dust with cinnamon if using, and eat while warm.

Millet cooks fast and doesn’t paste up like rice or need soaking like some grains. One pot of water handles the whole job. The oil is where the calories actually live—without it, this is thin mush. The dried fruit softens in the steam and adds both texture and sweetness without extra weight.

Millet tastes neutral and toasted if cooked right, which means it’s a platform for whatever you add. That’s the whole point on the trail. The recipe carries light and cooks in the time it takes to boil water once.

Packing

Mix millet and dried fruit into a single quart bag at home. Carry salt and cinnamon in a paper packet. Oil goes in its own dropper bottle.

Variations

  • Substitute barley for millet if gluten is not a concern. It cooks slightly longer.
  • Stir in a spoonful of powdered milk or coconut milk powder for creaminess without carrying liquid.
  • Add honey powder or brown sugar in the last minute for sweetness.
