Ingredients

| Foil-packet tuna in water | 5 oz | packets, not cans, and no liquid to drain off |
| Mayonnaise packets | 2 tbsp | shelf-stable single-serve, the kind delis hand out |
| Sriracha | 1 tsp | packet or a small dropper bottle; add more if you want |
| Soy sauce packets | 1 tsp | |
| Rice vinegar | 1 tsp | a dropper bottle, or swap a pinch of citric acid |
| Dried scallion | 1 tbsp | freeze-dried or dehydrated, split between the mix and the top |
| Nori sheet | 1 sheet | snack-size seaweed works |

Method
- Boil 400 ml of water, dump in the rice, cover, and pull it off the heat. Ten minutes, lid on, no peeking.
- While it sits, squeeze the tuna packet into your mug or lid. Stir in the mayo, sriracha, soy sauce, vinegar, and half the dried scallion.
- Tear the nori into strips with your fingers.
- Fluff the rice and spoon the tuna over it.
- Top with nori, the rest of the scallion, sesame seeds, and chili flakes. Squeeze the lime over if you brought it.
The original is a rice bowl built on fresh cucumber and refrigerated mayo. Neither travels, so the cucumber is gone and the mayo comes from packets, which are shelf-stable and portioned so you are not carrying an open jar. Dried scallion stands in for fresh, and the nori does the work the cucumber was doing: something dry and sharp on top of something soft.
The acid matters more than it looks. Vinegar and lime cut the mayo, which otherwise turns the whole pot into one flat, fatty note. Mix the tuna in a separate cup rather than the pot so the rice stays intact instead of getting stirred into paste.
Packing
Rice, dried scallion, sesame seeds, and chili flakes in one bag. Nori in its own bag or it turns to dust. Mayo, sriracha, soy, and vinegar packets ride together in a corner of the food bag.
Variations
- Swap the tuna for a salmon or chicken packet.
- Cold-soak the rice for an hour instead of boiling if you are skipping the stove; use instant rice only, and expect it chewier.
- A spoonful of freeze-dried peas or dried seaweed salad adds bulk without much weight.
