Ingredients

Method
- Put the meatballs, cranberries, and spinach in the pot with 500 ml of water. Bring it to a boil and let it run two minutes so the meat starts taking water back.
- Add the rice blend. Return to a boil, stir once, then cut the heat.
- Lid on. Ten minutes off the stove, wrapped in a jacket if it is cold. The grain and the meat finish in the same steam.
- Check the meatballs. If they still have a dry core, add a splash of hot water and give it five more minutes.
- Stir in the oil, lemon powder, mint, salt, and pepper. Scatter the pepitas over the top so they stay crunchy.
The original is a plated dinner: hot meatballs, cold salad, a spoon of yoghurt. None of that travels. The yoghurt and cucumber are gone, the spinach is dried, and everything now finishes in one pot on one boil. What survives is the part that made the dish work — sweet cranberries against sour and salt, with something crunchy on top.
Rehydrating the cranberries with the grain matters. Dropped in dry at the end they stay leathery; boiled alongside the rice they plump and give their sugar to the water. Lemon powder replaces the yoghurt’s job, which was acid, not creaminess. The pepitas go on last and stay dry, because anything stirred into hot pilaf stops being crunch and becomes texture.
Packing
Rice, cranberries, spinach, mint, and lemon powder go in one bag. Meatballs in their own bag, pepitas in a third, or they go soft and greasy against the grain.
Variations
- Chicken meatballs dehydrate the same way and cost less.
- Couscous instead of the rice blend cuts the soak to five minutes.
- Swap the meatballs for a hard grilling cheese at car camp and sear it in the pot first.
