Ingredients

Waxy potatoes 1 lb parboiled at home and cubed
Smoked sausage 8 oz fully cooked, sliced into coins
Eggs 4
Onion 1 small diced
Cooking oil 2 tbsp
Salt, pepper, smoked paprika to taste
Hot sauce a few dashes optional

Method

  1. Set the flat griddle plate over one burner and run it on medium until a drop of water skitters. Leave the second burner free.
  2. Oil the plate. Spread the potatoes in a single layer and leave them alone for six or seven minutes so they crust.
  3. Push the potatoes to the cooler edge of the plate. Add the onion and sausage coins to the hot center and cook until the sausage edges brown.
  4. Stir it all together, season, then clear two bays and crack the eggs straight onto the plate.
  5. Cook the eggs to your liking. Slide everything onto plates with a metal spatula.
  6. Wipe the plate with a paper towel while it is still hot. Cold grease does not come off.

This is a two-burner stove recipe, and the flat griddle plate is the whole point. A pan concentrates heat in the middle; a plate spread across the burner gives you a real temperature gradient, so potatoes can crisp at the center while cooked food holds at the edge without turning to leather. That is why the eggs go on last and directly onto the metal rather than into a separate pan.

Parboiling the potatoes at home is the difference between twenty minutes and forty. Raw cubes on a griddle brown long before their centers give up, and you burn fuel waiting. Everything else here is cooler food, so this stays a car-camp or basecamp meal. The last variation is the version that works out of a pack.

Packing

Parboil and cube the potatoes at home, cool them, and bag them with the diced onion. That bag and the sausage ride in the cooler. Oil and spices go in the kitchen box.

Variations

  • Swap the flat plate for the ribbed one and grill the sausage whole alongside the potatoes.
  • Add a tortilla per person on the second burner and roll the whole thing into a breakfast burrito.
  • No cooler? Use freeze-dried scrambled egg mix and shelf-stable summer sausage; the potatoes become instant hash brown flakes rehydrated on the plate.
