Ingredients

Whole egg powder 1/3 cup reconstitutes to about two eggs
Flour tortillas 2, 8 inch
Hard cheese 1.5 oz cheddar or manchego, cut at home
Olive oil 1 tbsp dropper bottle
Salsa powder or chili flake 1 tsp
Salt and black pepper to taste
Dried chives 1 tsp optional

Method

  1. Stir the egg powder into 120 ml of cold water in your mug. Let it sit two minutes so the lumps dissolve.
  2. Heat the oil in the pan over a low flame. High heat scorches powdered egg before it sets.
  3. Pour in the egg and leave it alone for a minute, then push it around with the spoon until it holds together.
  4. Scatter the cheese over the top, kill the heat, and cover the pan for a minute.
  5. Warm the tortillas one at a time on the hot pan, fill, and dust with the salsa powder and chives.

Powdered egg has a bad reputation, most of it earned by people cooking it too hot. It sets faster than a fresh egg and turns rubbery the second the pan gets away from you. Low flame, one minute undisturbed, then move it. Reconstituting in cold water first matters too: hot water cooks the powder into grit before it ever reaches the pan.

The cheese and oil are the calories. Egg powder alone is close to pure protein and will not carry a morning of riding. The tortilla makes it portable, which means you can be moving while you eat instead of standing over a pan waiting for it to cool.

Packing

Egg powder, salsa powder, chives, salt, and pepper go in one small bag mixed dry. Cheese and tortillas ride separately, tortillas flat against your back panel or they arrive as crumbs.

Variations

  • A foil packet of refried bean flakes rehydrated in the same mug turns this into a real burrito.
  • Swap the tortillas for corn ones if you need it gluten-free.
  • A squeeze of hot sauce from a mini bottle beats the powder if you don't mind the weight.
