Ingredients

Teddy Graham cookies 1 snack bag (about 1 oz) single-serve bags, not a big box
Canned pumpkin pie filling 1/2 cup the pre-sweetened, pre-spiced kind, not plain puree
Shelf-stable whipped topping 2 tbsp aerosol can or a powdered topping mix whisked with cold water
Maraschino cherries 2 optional, lift them out of the jar with a fork

Method

  1. Cut the top off the cookie bag with a knife rather than tearing it. A torn seam will split down the side later.
  2. Squeeze the closed bag until the cookies break into coarse crumbs. Leave some pieces whole for texture.
  3. Spoon the pumpkin filling straight onto the crumbs. Do not stir yet.
  4. Add the whipped topping and the cherries on top.
  5. Eat down through the layers with a long spoon so you get crumbs with every bite.

This is a layered dessert built inside the packaging it came in, which means no bowl and no plate. The crumbs stay dry until you eat them, so the crust never turns to paste the way it does in an assembled pie.

Canned pie filling is doing all the work: it is already sweetened and spiced, so nothing has to be measured in the dark. The catch is that an opened can does not keep, so treat this as a night-one dessert or scale the servings to finish the can. Powdered topping mix is the version that survives a whole trip without a cooler.

Packing

Crush the cookies at home and carry them in a wide freezer bag, which is sturdier than the retail bag and easier to eat out of. Decant the pumpkin filling into a screw-top jar or a squeeze tube. Open cans and any leftover filling need a cooler, so plan this for the first night or split one can across two people.

Variations

  • No cooler and no can opener: use a single-serve pumpkin baby food pouch and stir in pie spice and brown sugar.
  • Powdered whipped topping mix and cold water makes this fully shelf-stable if you leave out the cherries.
  • Swap the grahams for crushed gingersnaps for more bite.
